RIBBON CAKE

OH MY GOSH . . .
Its already 2012 & I haven't written in 6 months. I guess mothers/cupcake bakers are to busy to write blogs these days!
With all the stress of being a mother of two, I just haven't gotten the time to sit & write down in FULL detail about my culinary creations.
This ribbon cake has not been the only thing I have made these past months, many more kitchen messes have been made, DON'T YOU WORRY !
After many months if desiring to make use of my RIBBON icing tip and inspired by Rosie from Sweetapolita I gained enough courage to do it for my daughter's 12th birthday party.
She had a night in with her friends & all of them enjoyed the cake whilst admiring the icing.
One girl even said " Did you do the icing yourself?, my mum would just slop it on "
The party & the cake were a huge hit. Hopefully I will write more, but until then, bye!

Brown Butter Toasted Coconut Chocolate Chip Cookies

The above cookie is a mouthful to say but you could have a mouthful of them and you would still want more. I made them just in time for the school holidays. They are exactly as they are called except for the toasted coconnut. Next time round I would definately increase the amt of coconut added.

I got 50 cookies out of this recipe a
nd would have got more if I made them smaller. This recipe is from JOY THE BAKER

Mothers Day Classic

Last Sunday on the 8/5 was the Mothers Day Classic Run. The Mother's Day Classic a fun run and walk is a great way to celebrate Mother's Day and raise funds for breast cancer research.
At my work place we did our part to raise funds with a bake sale, cupcakes were sold to raise some funds. As the organization I work for was a proud sponsor our bake sale went really well. At the end of the day all the cupcakes were sold.

Made this pull-apart for breakfast this morning. The family was getting tired of having same old bread. It made a perfect start to the day with the house smelling of cinnamon.

These were an order for someone turning 21, they had a purple and pink theme.

I had made a whole lot of plum jam with some plums I got from a neighbour. I knew I had to make something with the jam, a cake came to my mind. Also had lots of nuts in my pantry, so I came up with a cake, jam and crumble slice.

How time flies. I was meant to blog on happenings in 2010 and now we are already 7days into the new year. Where has the time gone?

I was just thinking how lucky we are to be able to connect globally by blogging and learning all about food. I for one have enjoyed reading so many post by various bloggers in the past year. Thank you all for sharing.
This year I am hoping to post more frequently than last but sometimes 24 hrs in a day is too few for all task to be completed.

My mother inlaw turned 60 recently and she did not want a to make it a big thing but any excuse for the family to dine out so we went along and planned a surprise anyway.

It was a lovely day and the perfect spot was spotted in the Dandenong Ranges. Breakfast it was as dinners and lunches was getting a lil bit old fashion these days.
It was a nice spring morning and the drive up the windy road to Olinda was breathtaking. The restaurant Coonara Springs was as pretty as pink that day with all the lovely flowers in bloom. Breakfast was a hit with everyone esp the scrambled eggs.

I had made a bouquet of cupcakes for my mother in law and she was just in shock when they were brought out.

Anzac Cookies

Anzac cookies on their own and Kingstons when sandwiched with chocolate ganache. Any way you have them they are extremely addictive and yummy. I prefer them without the choc but everyone else I know love them the Kingston way.

I had seen the recipe some time ago on one of my favourites blogs and somehow I knew there would come a right time for me to make them. We had to be vegetarians over a period celebrating some auspicious days and eggs were also forbidden so out came this recipe. Thanks to Julia from Melanger to Mix for sharing this recipe. I made a few chnages to the recipe to suit.

I have since made a few of my own variations by replacing the oats with Cornflakes
- Cornflakes and Coconut
- Cornflakes and slivered Almonds
Will be trying out with different nuts soon. Will keep you posted.

Good Shepherd Netball Club Presentation

The Good Shepherd School Netball club had their presentation night on the 27/8/2010 at the school Hall for the first time this year. The coaches and all those inlude in running the netball club were given a small token in appreiation of what they had done for the club.

The players were also awarded with trophies to encourage their participation spirit to grow. One of these players is my daughter who plays for the under 11 Bunnies team. She for one has definately grown as a player and enjoys her trainnig and Saturday matches tremendously.

All the girls in the team love their game and I think they most look forward to the lollies they receive at the end of each game brought my each parent in rotation. During the pass season I had promised to bring cupcakes for the girls but with a last minute huge order that I received I was unable to keep my promise.

So opportunity striked during the presentation and I baked 104 mini cupcakes for all the girls in all the teams. I made a mix of chocolate and vanilla cupcakes with a buttercream frosting. Hope they enjoyed them, actually Im sure they did.

Happy Homemade Sugar Cookies

Lately I have been coming across blogs with amazing cookies. They are the most basic of all cookies, the sugar cookie. With lots of butter and a hint of any flavour you fancy these cookies can come in any shape and colour to match any special occassion being celebrated.

I had to give them a go. A friends daughter was turning 4 and she was having a butterfly party so I made them for her. Patience and lots of practice is what you need while making these cookies. Having one colour dry before you do the next is absolutely crucial to avoid the colours mixing.

Tell me what you think. Here I also have a bouquet of cupcakes made for a Sunday lunch.

There seems to be many turning 21 around this time of the year. These were requested by a very thoughtful boyfriend for his girl. She was turning 21 and he ordered these cupcakes for a dinner party for her.

He was not to sure with the decorations, so I thought a flower would be pretty. We had plain buttercream on both the choc and vanilla cupcakes in two different colours - pink and white.

This weekend has gone so quick with the family being at home. Sometimes I wonder if I prefer the routine of work and school or long weekends. What about you? For me at least its only once or twice a year that we get such a long break.

Saturday was a day full of baking for me, as someone was singing -

The cupcakes were a mix of Vanilla and Rich Choc with Choc Ganache and Vanilla Buttercream and yellows flowers to top them off.

I still remember my 21st surprise birthday party although its was quite sometime back. It was a all black party organized by my sister and few good friends who helped keep it a surprise. I must say it was such a surprise that I was still in shock even after the party ended.

Anyway unlike these pretty blue and white cupcakes made for a 21st bday party, my cake was a simple one. I think my sister made it.

Cupcakes for a Cause 22/3/2010

Made a huge batch of cupcakes over the weekend for a cupcake sale at work. Part of the proceeds from the sale were to go to the Good Friday Appeal.

These were the 3 flavours I made :

- Banana Cupcakes with coffee buttercream topped with a sweet banana chip and a sprinkle of cinnamon (pic above)
- Rich Chocolate cupcakes with vanilla buttercream topped with flake and choc easter eggs
- Dark brown sugar vanilla cupcakes with caramel drizzled with caramel sauce and topped with a Malteser

The sale was good and a huge thanks to all who contributed by buying a cupcake.

The sad thing is that I was was so busy baking I forgot to take pictures. Luckily there I was able to bring one home so I got a ONE pic....yes only ONE.

MS CLUB MAR 2010 - LEMON MERINGUE CUPCAKES

It's the 17/3/2010 today and I still have not been able to bake up our this month's lemon cupcakes.
1) We are not in lemon season at the moment and I have to go to the shops to get some and have not been to the shops in a few days
2) My almost 2 yr old lil one is getting a little demanding these days.

I MADE IT...

My laptop was gonna die on me while I was reading the latest on the "MOTHER OF ALL CUPCAKE" blog Cupcakes Take the Cake. They blog about everything you would want to know about cupcakes...and believe me there are many out there who are crazy for cupcakes like yours truly.

I have always been a close follower of the blog and am amazed by all their findings about cupcakes, their flavours, whats in, whos opening another cupcake store and where its opening, cupcake camps and get togethers, cupcake tasting contest, cupcake tshirts, cupcake jewellery etc.....follow this blog and you will never be cupcake clueless.

Anyway back to my story, I was reading, reading, reading, reading and reading.....ahhhhhhhhh....OMG ahhhhhhhhhh (screams) and there it was my humble little Happy Homemade Cupcake blog starring in this BIG Cupcakes Take the Cake blog. At last I made it there. It was my Mini Flower Garden that did it for me.

My New Look

Its been a while from when I wanted to change the look of my blog. This time I gave it all my time and did whatever it took to get this page upto scratch. Actually it was not so much the time but it was more my comp skills....I somehow did not undrstand this HTML stuff. But after reading and trying to understand and also not forgetting the million questions I asked my husband now I know its not that difficult. Keeping it simple was the way to go....CLEAR and SIMPLE.

Well thats what I wanted to achieve and I hope I have. So please if any of you have some time please leave me a comment on how I did, your opinion matters.

As for a cupcake blog more cupcakes will return soon....

MS CLUB FEB 2010 - S'MORE CUPCAKES

Hello all, once again we meet with our testings of recipes from Martha Stewart's Cupcake recipe book. This month is it the S'more Cupcakes picked by one of our members, Mary Ann from Meet Me in The Kitchen.

Australians are not familiar with S'mores. You could say that S'more to us are like Lamingtons to you. My version of this cupcake would be a Cinnamon Cupcake.

Anyway my experience baking them did not have a very good start as I looked all over for graham flour with no success. In the end I use ATTA flour. If you are familiar with the Indian home made bread called 'chapati' then you would know of the ATTA flour. This flour is like wheat flour and has lots of good in it.

The cupcakes turned out perfectly good with this flour taking that I have never baked with it before. It was super moist and had a great cinnamon flavour. It even rised well.

As for the frosting, bad news. I did not end up frosting them(pic above) as I dont like using gelatine. I tried using agar agar a kind of seaweed that we use when making our asian jelly but it was a disaster. My daughter ended up eating the mushed jelly that was meant to be frosting.

On the whole this cupcake was good and if I ever make them again I would probably just frost them with a simple cinnamon buttercream made with dark brown sugar.

These were made for a friend for her birthday. She loves the colour blue but its a banana cupcake so I thought the yellow flower would be more appropriate. Anyway her feed back was good she loved the combination of the bananas and the coffee buttercream. This is one of my fav cupcakes. Both have a great aroma, when baking with bananas and when brewing coffee. Let me know what you think.

MS CLUB JAN 2010 - Coconut Cupcakes

Here we are again, I made these cupcakes a while back when I had watched Martha's show on cupcakes where she had some bloggers I think they were from Cupcakes Take the Cake. They were her fav as well.

With my asian background, coconut is a must in our cooking. The taste of coconut is yummy in anyway to me esp the thirst quenching coconut water. I too found these cupcakes light and airy. The 7 minute frosting was simple to make and fluffy. I found it really easy to ice the cupcakes with this frosting and it went on really well...no need for any skill to make it look pretty. The toasted coconut gave that extra crunch. I dont remember how quick they went but I know ate quite a few.

Hope everyone enjoyed these cupcakes as much as I did.

Girlie Cupcakes

My daughter just turned 10 and she wanted a DISCO themed party, her friends were all expecting cupcakes so I thought I will make a cake instead. However with some extra batter I made some mini cupcakes as well. Her friends had lots to say abt the cake.

So when a 13 year old girl wanted some cupcakes for her birthday and she wanted something pink with flowers with a touch of glitz and glamour I knew what these would look great.

Christmas has two meanings to us :

1) Boxing Day ie. sales and

2) the year is coming to an end. However this year we did get together with the family for a Chrismas like dinner. There was roast chicken and baked stuff, the stuff we normally dont have at our family dinners. I must say it was fun we might just make it into a family tradition.

Anyay it was a busy time for me with a few orders for fruit cupcakes with cinnamon buttercream, chcolate and vanilla cupcakes. It was fun decorating them. I also got to use my edible glitter.

MS CLUB DEC 2010 - Gingerbread Cupcakes with Cookie Cutouts

Its that time of the month once again, this time the MS group made Gingerbread Cupcakes. I know I am a little late this time but better late than never.

These CCs were the perfect pick for this month. The CCs had a spicy feel and they tasted a lot like gingerbread. We have to many birthdays in the family in December so had to do without the cutouts. Hope you like the holly leaves.

The cupcakes were moist and full of spice with the 4 strong flavours. Looked everywhere for unsulfured molasses, eventually I substituted it with honey (1:1) after doing some research on the net. I will not know how they tasted with unsulfured molasses but mine with honey tasted real good. Preparing and baking them was easy.

Would love to hear your comments on how your baking went.

MS CLUB NOV 2010 - Candied Sweet Potato Cupcakes

Its the 15th of November today and its time for show and tell for the MS : Cupcakes Club members. This month we have the Candied Sweet Potato Cupcakes topped with Marshmallows and candied pecan pieces(a combination I would never have thought of) on page 243.

I made only quater of the recipe as everyone I mentioned to about the cupcakes were hesitant when they heard sweet potato. Also, making a whole batch would only mean that they would all be consumed by myself....which is not good. I absolutely love sweet potato and was excited to see how it would taste in a cake. The batter looked lovely....a rich brown colour. I roasted my SP under the grill and it was not too messy when scooping the flesh out as the skin of the SP was a little hard from the browning. I tried some of the mushy SP and it tasted yummy warm. Overall I did not have any problems making them.

As for the taste :

1) I did not think it gave a very strong SP flavour which was good as it did not put off those who were initially hesitant.

2) the two spices, cardamon and nutmeg was nice and not too strong

3) the cake itself was nice and moist.

As for the presentation with the mini marshmallows it was lovely. I did not have any pecan nuts on hand so mine are without them. I arranged the marshmallows on the cupcakes and let them sit under my grill for a short time. This browned and swelled the mini marshmallows and I think they looked pretty.

These were made for a friend for a party. They are banana cupcakes with coffee buttercream(I used Armenian coffee). This was the first time I had Armenian coffee, it gave a lovely aroma while brewing and I knew the buttercream would taste yum and it sure did.

I love the gold ball on the top it looks almost like a drop of gold. Let me know what you think.

Im guilty of not baking these as yet....its Diwali tomorrow(festival of lights) and its been a busy week for me. I have been making some sweets that I use to make with my mum when I was young before this celebration. I will post some pics soon.

Today I decided to create a logo for my cupcake business (I dont really like to call it a business as I love making cupcakes). Well this is what I came up with. Everyone who saw it loved it and I hope you all do too. I loved it too. Let me know what you think.

The roof has been outlined with jelly ropes, the windows are made with sprinkles and the door knob is made with a little cut jelly rope.

Ameesha's creation - Halloween Cupcakes

With all the extra icing and the school hols it was time for me to let Ameesha bring out her artistic side to cupcake decorating. Since Halloween is around the corner, this is what she came up with.

I must say I was pretty impressed...her love for lollies show in this cupcakes. They dont look really scary but its ok. She and her friend had a feast eating those cupcakes.

M&M Cupcakes with Blue Buttercream

I have had 3 request since I first made them and surprisingly each time they come out looking the same. Maybe I should try the M&M's on pink/mauve coloured buttercream. Busy Weekend

I have never baked so much in a day. I had an order to complete for Sunday morning and I had invited a Melbourne based blogger to sample my cupcakes. The pink cupcakes with sprinkles were made for a 8 year old girl's birthday party. The cupcakes were picked up early on Sunday morning.

I figured lilttle cafes are always getting all the attention but what about us - home based bakers.

She blogs about restaurants in Melbourne and her love for food. We both share the same feelings when it comes to cupcakes. As I mentioned home based businesses do not get so much attention as they are tucked away somewhere in the suburbs. I baked 4 different flavours for her to try. Get together Cupcakes

A few friends of mine from abt 10 years ago came over today. As its strawberry season I decided to make some chocolate cupcakes with strawberry frosting. The came out lovely and they tasted good too. The girls loved them and even took some home for their kids/grandchildren.

This was the first time I made strawberry frosting and although I am not a big fan of strawberries I quite liked how the frosting tasted. What I found was that when I added the sberriesinto the frosting mixture while beating it curdled a little but after some continuous beating it was ok. Here are some pictures for you to feast on.

Also let me know if you have faced the same problem as I have when adding the strawberries.

My daughter has been friend with this girl from 3 year kinder and this year they both will turn 10. How time has gone and I have seen the change in them. Many parties this year for the big 10. Mine is already plannig hers which is late this year.

I made some vanilla cupcakes for her Breakfast Party tomorrow. She asked for pastel colours and this is what I got. The icing was really fluffy and yummy. Here are some pics.

These coconut cupcakes are so yum. I made them as I was looking for a way to use up my coconut flakes. Turned quite good, the cake and the frosting taste really good with the crunh of the toasted coconut flakes on top. Let me know what you think. Will be taking some for a friend tomorrow lets see what she thinks.

The cake also has coconut in it, so for lovers of coconut theres double dose here.

I been looking for a 6 hole ECKO brand cupcake pan. I have one from before but I dont remember where I purchased it from. They are really great as the cups have a height to it which gives the baked cupcake a tall look. I dont quite like stumpy looking cupcakes. If anyone knows where I can get one in Melb pls let me know. Have looked everywhere. I currently can only bake 6 ccakes at each time which takes me a long time. I sometimes resort to using my 12 hole stumpy cupcake pan. HELP!

I had made a burnt sugar cake and made a cupcake with the same batter. Tried making a icing also using the burnt sugar. Am happy with the result.

Today I tried a cake that my mum use to make for us when we were little. I remember helping her in the kichen all the time esp when she made sweet treats for us. Those memories of cooking and baking with her will always be with me, and thats one reason why I am always getting my girl now to help me in the kitchen. I believe u learn better when you watch coz it stays in your mind.

Anyway today I baked a cake that I have always loved. Its called KEK GULA HANGUS and literally translated to english its know as BURNT SUGAR CAKE. This cake is also sometimes called KEK SARANG SEMUT or in English ANTS NEST. This is because of the caremalising of the sugar hence the forming of holes like an ants nest.

I have a love and hate relationship with them, I love making them and frosting them but lately after starting my home biz, I am absolutely cupcaked out. I have probably eaten way too many of them. But I cant stop myself from trying new flavour with my favourite ingredients like dates and coffee, burnt sugar and honey comb and many more.

Any one out there feels the same. I still love looking at them.

I have just joined the list of bakers baking from scratch.
With almost all of the store bought foods these day containing preservatives, I feel that by supplying happy and healthy cupcakes I can do my bit to bring back those basics of home made cakes/food.

Let me know you think abt having it the happy and healthy way. How important is it to you to consume food without preservatives.

Last week I made some banana cupcakes with coffee buttercream which were a hit at a family get together.

My latest bake were some brown sugar cupcakes. Made them for my mum who has come down to spend some time with me. She loved them and the look of them too.

SWIRL or FLAT

Its been a few days. Well, I just wanted to know how many of you cupcake lovers out there like the swirl and how many of you like the flat finish with not to much icing. You see I been thinking, is the look of the cupcake more important than the taste. Many people like looking at pretty cupcakes but when it comes to ordering, the sweetness becomes an issue.
I think :

SWIRL - TOO SWEET
FLAT - JUST NICE

SWIRL AND FILLING - WAY TOO SWEET
FLAT AND FILLING - NICE BUT STILL SWEET

How much icing is enough icing? Lets put this to the test.

Hey all it went well the cupcakes have been delivered and Im happy I made my first order. The red icing was not easy to make, it came out kinda pink so I did not use it on the cupcakes just on the cake. My friend was pleased so Im too. The yummy chocolate cake with metallic blue buttercream icing looks inviting to me. Hope the kids love it too. Tell me what you think.

The best thing happen yesterday, my daughter and I were looking thru the paper and she asked me to call a country club to offer my cupcakes to be sold at their cafe and surprisingly the lady at the club was interested. So today we made some cupcakes to take along. We made plain choc, jaffa, vanilla and lemon. We gave them to her to try. Shes gonna come back to me next Tuesday so lets see how it goes. Will report next week.

My daughter's friend is having her piano recital tomorrow and I offered to make some cupcakes. I made them a lil while ago. As a surprise I am gonna frost the ccakes and have also made some chocolate treble clefs to place on the icing...wish me luck, hope it looks good. Maybe I will add some pics for all to view.

I have been following lotsa blogs lately esp 52 cupcakes. Well now I think its time I start one of my own. In 2006 we were in Vancouver for a holiday and came across this shop that sold only cupcakes and have since been dreaming of starting something like that on my own.

My background in baking is by interest and trial and error. I bake for family and friends and am keen on moving on to baking for fund raising at schools or churches.

The pic on the left are cupcakes I made for my nephew for his 2nd bday. He is a big fan of M&M's. The cupcakes acted as balloons on strings. Niceeeeeeeeeee.
